Instructions

Makes a great vegetarian burger when whizzed in a food processor with a few herbs and spices. Try soya beans in falafel, soups and salads.1. Soak 100g beans in 500ml cold water for 8-12 hours or overnight. 2. Drain and rinse thoroughly. 3. Place the soaked beans into a large saucepan with 500ml of water. 4. Place the pan on the medium hob ring over a high heat. Bring to the boil and boil for 10 minutes. 5. Reduce the heat to low and simmer for 80 minutes, until the beans have softened but are slightly firm to the bite. 6. Drain thoroughly, rinse and use as required. Time: 1 hour 30 minutes
